Food safety is one of the fundamentals of food security and it is an area of public health relevant to everybody on the planet.
New threats to food safety are constantly emerging through many factors, including changes in the environment, agricultural practices and food production, as well as the increasing globalization of trade.
Research in food safety science is therefore critical to better manage both known food safety threats and those that are emerging, as well as the yet unknown challenges we may face in the future.
Partnerships & Collaborations
The Mars Global Food Safety Center works with more than 25 partner organizations and academic institutions to share knowledge, generate new insights and help improve the resilience of supply chains in vulnerable countries around the world.
Our aim is to help to drive higher crop yields in a sustainable way and reduce contamination, food waste and environmental impact, while improving nutrition and economic value, helping to raise the bar on food safety and ensuring safe food for all.
Training & Events
The Mars Global Food Safety Center raises food safety awareness through education, training and knowledge sharing.
We harness the power of international collaboration and operational insights from Mars sites around the world, to deliver training programs to food safety practitioners, regulators, food suppliers, and non-governmental organizations (NGO’s).
Since opening our doors, the Mars Global Food Safety Center has hosted more than 1,000 visitors from around the world and trained more than 200 people from NGO’s, academia, industry and government.

Microbial Risk Management
We are investigating innovative, new technologies and methodologies with the potential to transform the management of microbial risk from reactive to predictive and ultimately preventative.
Mycotoxin Risk Management
Our goal is to mitigate and, ultimately, eradicate harmful mycotoxins. We work with strategic partners to generate new knowledge, build capability and develop training, and practical solutions which can be applied to help mitigate risk at vulnerable points in the food supply chain.
We investigate cutting edge tools, methods and capabilities to help mitigate food integrity challenges across the global food supply chain, helping to protect raw food materials and finished products.
