Our Research
The Mars Global Food Safety Center is committed to generating new knowledge and improving food safety capabilities and methodologies, because the world we want tomorrow starts with how we do business today.
We believe everyone has the right to safe food. Yet food safety risks are increasing at an unprecedented rate, and new threats and hazards keep emerging. Each year almost one in ten people in the world fall ill after eating contaminated food. Illness linked to unsafe food overloads healthcare systems and damages economies, trade and tourism. As the human population grows and climate change exerts pressure, it is critical we invest in food safety science and technology-based solutions.

Meet the Head of Food Safety Research and the Global Food Safety Center.
Dr. Boris Bolshchikov
Dr. Boris Bolshchikov is the Head of Food Safety Research and the Global Food Safety Center at Mars Incorporated. He leads a team of food safety scientists and capability building experts dedicated to the capture and translation of new knowledge and scientific insight into novel technical solutions and practical capabilities. The team’s current focus includes pre-competitive research, partnerships, and training on the topics of microbial risk management, mycotoxin risk management, and food integrity management to help ensure safe food for all.Boris holds a Master’s and PhD in Chemistry from the Russian Academy of Science and Moscow State University, specializing in synthetic and computational approaches in macromolecular drug design. Boris joined Mars in 2011 and has since held various leadership roles in Innovation, R&D, and Commercial across Russia, Eurasia, and Asia. Prior to his career in Mars, Boris held R&D management roles in Unilever and in science & technology startups.

Mars, Incorporated opened the Global Food Safety Center in 2015, driving a scientific approach to food safety, fostering collaboration and enabling partnership with academia, governments, non-governmental organizations and industries to raise the bar and ensure safe food for all.
